Recipe's for slow cooker

    I have found I am much happier in the evening if I put together dinner in the slow cooker. When I get home from work I want to eat dinner finish up loose ends of school and have some me time. Believe it or not I like that!;)

    I have found some fantastic recipes but we could always use some more. I am not fond of the ones with Cream of Mushroom soup. I am trying to stay away from that. Otherwise its fair game.

    Does anyone have recipes for breakfast that can cook overnight??

    I've been using my crock pot more lately, too. I'm loving NOT working two evenings a week since our move, but with two swimmers, who practice every evening, I need suppers to be easy sometimes.

    Recently, I've done chili, BBQ chicken sandwiches (frozen chicken breasts and a bottle of BBQ sauce), and a Chicken Salsa recipe I found on Pinterest:

    - Bag of frozen Chicken Breast Tenderloins (2.5-3lb bag)-I used 3 regular bresats.
    - 8 oz block of cream cheese, not fat free
    - Can of Black Beans, drained & rinsed.
    - Can of Corn, drained.-I use 1 small bag of frozen corn.
    - Can of Rotel

    Directions:
    Put frozen chicken in the crock pot.
    Put Cream cheese on top of the chicken.
    Dump in the Black Beans (make sure they are drained & rinsed!!!)
    Dump in the drained corn.
    Dump in the Rotel.

    Cover & cook in your Crock Pot on low for 6-8 hours.
    Every 2 hours, I stir the ingredients.
    You can shred the chicken when it is done, or just leave it as tenderloins. (I shred)

    We served over rice. Leftover, it makes a great dip with tortilla chips.

So the next year, every time I walked into a store with Rachael, I told her, "That's what I want Dad to get me for Christmas this year...." So she knew exactly what to tell him, lol!

    There's plenty of great recipes on-line. Here's one I want to make to put in the freezer: (It's a new one for me, so I can't say what it will be like!!!)

    Chicken Taco Bowls

    1.5 lbs chicken tenders(or chicken breasts)
    1 (16 oz) jar salsa
    1 can black beans
    1/2 lbs frozen corn
    1/2- 1 packet taco seasoning
    2 C dry rice
    1/4-1/3 cup of water
    Shredder Cheddar cheese
    (optional) cilantro, Frito's

    1. Mix all ingredients in crock pot, EXCEPT rice and cheese.
    2. Cook on low for 4 hours(6-8 if using nomral chicken breasts)
    3. When 8 hours in nearly complete, cook rice according to directions on package. (To freeze- Pour mixture into an airtight plastic ziploc or container. Allow to cool in fridge for 1-2 hours before placing it in the freezer)
    4. Using a fork, break up chicken so it looks 'shredded'.It should be tender and shred apart easily.
    5. Place rice in bowl. Top with mixture. Top with cheese, cilantro, and broken Frito's

    Amie, do you use the steal-cut oatmeal when you make it? I tried oatmeal in the crockpot a while back, and it was a disaster! I think I got the steal-cut oatmeal for it....

    That's what I thought, Amie. I looked into it seriously a while back, but even with the steal-cut oats, it didn't work out well for me. I was trying to find ways to make a hot breakfast in the AM that wouldn't require me to get up and cook. The only thing was to make sausage burritos or "Egg McMuffins", etc., in bulk and freeze them. Then the kids could warm them up in the microwave in the AM. Faythe actually did a 4-H project on breakfasts, and as an added part of it, she put together a notebook on "Make-Ahead Breakfasts". It got her an Outstanding on her project!

    nope I never cooked breakfast in the slow cooker. But I do use my slow cooker 5 out 7 nights a week.

    I will put a beef roast with some beef broth add some season to what you think you family will like then add potatoes, onions and carrots and let it cook on low all day long.



    then with left overs turn into beef stew add a few more things and you got another meal.


    Chicken we do tons of chicken in the slow cooker. I will buy whatever is on sell if not boneless I will make it boneless don't like bones in slow cooker food.

    one meal I made with chicken. Oops you don't like cream of mushroom wouldn't post it then.

    I do pork roast too. Well add a pork roast with seasoning and little water on bottom. Let it cook then will make rice and stuffing to go with it.

    I just read about the oatmeal and one thing I found interesting that the non stick surface tends to get hotter. I have found that to be so true. I do have to cut my cooking time down.

    I'm not a cream of mushroom fan either but I've found I can substitute cream of chicken with chicken recipes. I even do green bean casserole with cream of celery. On that same note I like the looks of the recipes posted but dh will not eat black beans what would be a good substitute? Thanks.

    Could you substitute pinto beans, or will he not to those, either? I'm not a bean eater, nor are the children. Carl says black beans have strong flavor. Since the kids and I aren't really bean eaters and I want them to LIKE (or at least, tolerate, lol!) the taco bowl recipe, I put in a half can of pinto beans instead of a whole can of black beans. We've not tried it yet. I froze it, and will probably have it next week.

    We love the meatball stew recipe that can be found on Allrecipes. I'd link you but I'm too new to put links in my posts. But its one of our favorites - even the kids gobble it right up.

    I've also been known to change the liquid ingredients if I don't have everything on hand in the cabinet. Sometimes I use tomato soup and/or cream of mushroom soup with beef broth instead. Regardless it always turns out yummy. And we have found that adding 8oz of fresh mushrooms to the pot adds a great flavor too!

    HUH! It posted the link for you; I wonder why...?

    Regardless, it looks REALLY good! My dh isn't big on meatballs. He's weird; doesn't like meatloaf, and to him, meatballs are small, round meatloafs. But the kids and I will like it, and he can just lump it, lol!

    thats how I make my scalloped potatoes all the time. If you don't like cream of mushroom soup I have used cream of celery and it turns out just as well. My family wouldn' have scalloped potatoes any other way.

    Thanks for the meatball stew will have to check this out. We love meatballs here.

    I tried a new crock pot recipe today:

    Ranch Pork Chops:

    Put pork chops in crock pot with one can of Cream of Chicken soup and dry ranch dressing. Cook on low for 6 hours or high for 4 hours. Very yummy!!

    They all sound so good. I will get started on some of these. Thank you....

    One of our family favorites is Pork Chops
    fresh garlic
    fresh ginger
    brown sugar
    soy sauce
    ketchup

    All I do is mix it up and pour it over the pork chops and cook them on low for about 4 hours. Everyone LOVES it...... I the ginger gives it a fantastic flavor
