What's for Dinner?

    Well I really am not in the mood to cook today, but I am going to make a homemade pizza. I make mine in a big cookie sheet to feed the troops. :p
    Sausage-puppironi and cheese.

    What are you having for dinner?

    Daughter's too sick to eat.

    Younger two are eating mac & cheese.

    Daddy's night out - so free night...no cooking.

    Haven't decided what/IF I'm going to eat tonight.

    lasagna that was made ahead a couple of weeks ago and frozen, with a salad

    If I get to the store today we will be having sour cream enchilladas for dinner tonight :D

    I made the living on a dime dinner - the $6.00 Valentine's Day dinner for 2. (NOT!)

    I only made the:

    French Onion Soup (very GOOD!!)
    Lemon Potates (not so much..)
    Maple Glazed Chicken (eh..okay, not too bad)
    Red Velvet Cake (ooooh good!!)

    I also had peas (Yek!) for another side. And Champagne, with water crackers and cheese as an appetizer.

    FYI: The things I DID have to buy from the recipe list cost me more than $6.00. :| But, I did have a lot of the ingredients at home.

    Don't get me wrong, I am no means a cook. :? If I had not found this menu to try out, our usual menu is Breaded Chicken (comes in a big bag from Sam's) which I bake for 20 min, while I open a can of Corn and microwave it, and then either open another can of peaches or cook rice in my steamer (super simple - add water, add rice, push start button). If my meals take more time than that, I usually either burn it.

    I'm kinda making it up on my own and throwing together a few different recipes.

    :)

    I forgot I have a meeting tonight at 6:30, so I might end up making this TOMORROW night, but as I said, if it turns out yummmmmy....I'll post!!!! :D

    Tonight we are having a Italian crispy chicken with pasta and Alfredo sauce.(my kids love this one) I actually planned my meals this week. EVERYONE like when I do that...

    We are having grilled salmon and probably baked potatoes. Usually I throw some diced potatoes with olive oil, onions, garlic and some seasoning in aluminum foil and put it on the grill with the salmon but I might just make diced potatoes with olive oil and french onion soup mix shaken on them and baked in the oven. We haven't had that in a while. Dessert will be left over molasses cookies that I made yesterday. Oh and some sort of vegetable from the freezer.

    I just went food shopping AGAIN...and it still feels like we have nothing to eat.

    I am going to have to push the enchilladas until tomorrow, but I got some jalepeno jack cheese to use (I think I'll cut it half/half for regular jack).

    My plan is this:

    Corn tortillas
    2 to 3 cups shredded chicken (cooking it today to get it done)
    thinly sliced onion (using a small red one)
    cheese

    mushroom soup (progresso b/c of wheat issue)
    4 oz can of diced chiles
    1 cup sour cream

    Mix soup, chiles and sour cream together. Add about 1/4 cup to the shredded chicken.

    Place chicken mixture, onions and cheese inside tortilla - roll up...place in baking dish.

    Pour the rest of the sauce over.

    Bake about 20-30 mins on 350 till all cooked and bubbly.

    Serve with guac, salsa, extra cheese, etc.

    Also making a salad - maybe a corn/black bean salad, not sure...

    But again...that's for tomorrow night, I'll let you know how it turns out! :D

    Thank you for the recipe, guess you know what we are having for dinner tonight.

    I know what you mean about buying groceries and feeling like there isn't anything to eat. Money doesn't go very far anymore. We pay $4.45 for a gallon a cheap white milk. I remember when it used to be under $3.00. Are the cows on strike or something?

    Do you do your pinto beans in a crock pot?
    My family LOVES fried potatoes and beans.

    ABall - are they canned pintos or dried?

    I bought my very first bag of dried beans this week. My husband loves pinto beans and I've been promising that I would make him charro style pinto beans (mexican).

    There are directions on the bag...BUT if anyone has tips on cooking dried beans, I'd love first hand tips!

    Be sure to rinse them very well. I use a strainer. Soak them over night in water, rinse again. I use a crock pot and put in a tablespoon of Crisco so the beans don't stick. Cook all day, salt if you like salt. You can also put in bacon if you like the bacon taste.
