Start with a white sauce which is: 1 tbs butter 1 tbs flour 1 cup milk Melt butter, whisk in flour and keep stirring so it doesn't get lumpy. Add milk and cook until the milk is reduced and coats the back of a spoon. Add 2 cups shredded cheese (American, cheddar, Monterey Jack and Parmesan work well - although if you do parmesan you're technically making an alfredo!). Hope that helps! Oh...the butter flour combo is a rioux and you can actually cook that REALLY LONG until it turns brown, in which it would be a base for a gumbo!

Last night we had brown rice, steamed green beans and I fried some ham on the side for Handsome and Ems.
Last night was had broiled garlic/lemon red snapped, wild rice and sauted carrots and zuchini. Tonight we are having Chicken spaghetti and salad.
I am going to make chicken enchiladas for Handsome and Ems, with rice and beans. I am making myself some using goat cheese, whole wheat tortillas and no sauce. I have no idea what they will taste like, but I can't wait. Patty
