What's for dinner?

    One of my favorite sites for recipes is
    www.copykat.com
    I made spaghetti for the kids and made a
    Rueben Casserole for us. I was pretty sure the kids would not like it. It was a layer of sauerkraut, fresh tomato slices with thousand island dressing dotted on top, corned beef sliced thin, and swiss cheese; In the oven for about 15 min., then I served mine on toasted rye bread. The recipe called for biscuits cooked over the top, but I wanted to try the other.

    Tonight it will be the Chicken Casserole from Cracker Barrel.

    Oh - I also added thinly sliced onions, also not in the recipe.

    I make the chicken and dumplings like cracker barell, never had them there, but had the recipe from one of the copy cat sites.

    For pork bbq sandwiches (or beef)

    1 roast
    1/2 thin sliced onion (or dehydrated onion flakes)
    1/2 bottle favorite bbq sauce.(use the other half after you shred the meat)
    cook until tender, shred with fork, stir in a little of the juices and the rest of the bbq sauce, microwave shredded meat for a minute or two then put on hamburger buns or hoagie rolls.

    Ha! I'm w/ you on this one Kris!! I'd much rather just GO....but finding copycat recipes is nice too, since we can't always GO, right?

    Tonight for dinner we are having lasagna, salad and french bread. I just recently began making homemade lasagna and my whole family loves it. I LOVE Italian food. My fav!

    We had chicken fingers, french fries (I had a baked potato), peas and applesauce. Dh didn't get but the chicken fingers on the run - had to go back to work to salt streets.

    Sabrina - Rueben Casserole sounds wonderful - will have to try it.

    italian turkey sausage with sauteed tomatoes and zucchini, steamed broccoli and sweet potatoes.

    Making the Chicken Casserole -copykat of Cracker Barrel- right now. I will let ya'll know how it turns out. It was really easy! Serving with baked potatoes, green beans and rainbow carrots(they are so pretty with the mixed colors and different flavors).

    Tonight I made baked chicken breast coated in dill, onion, salt, and garlic. Yum! We had corn and noodles as a side.

    We had Mushroom Couscous, with a veggie meat dipped in a dry mix I make then fried, and mixed veggies. It was good!

    Patty, is there a recipe for that coating mix? Sounds really good! I'm hoping to have venison later this week, maybe tomorrow.

    Jackie, I just mix the ingredients together to taste. Usually I use a lot of dill weed, and everything else to tase. It is kind of like the Pampered Chef All-Purpose Dill Mix. I love using theirs but it is costly and I can make it myself for less. It tastes a bit different but still very good. I use skinless breasts or just take the skin off. I make long slices in the breast and put the seasoning inside the center of the breast and coat the outside. Then I cover the pan with foil and cook them at 400. I uncover it the last few minutes to brown the chicken. It is very tasty. You might have to try it a few times to get the flavor you want but it is easy. I also make sure the dill is crushed really fine so it doesn't over power each bite.
